RUSTARK acidic demineralized syrups – innovations for confectionery production

In October 2025, RUSTARK successfully implemented a technology for purifying starch syrups obtained by acid hydrolysis using ion-exchange resins. This technological breakthrough has significantly improved product quality by enhancing its characteristics and expanding its application range. The new method ensures effective removing of impurities and unwanted components, providing high purity of the finished product.

This technology allows to maintain standard functions of acidic syrups, its carbohydrate profile and anti-crystallization and structure-forming properties, and at the same time improve the organoleptic and functional characteristics of the product. Purification with ion-exchange resins ensures high quality of the syrups, improves their color, transparency, taste, reduces acidity and mineral content.

It has been defined that, compared to conventional caramel syrup, demineralization helps to reduce the viscosity of the syrup, making it more transportable in technological processes.

Specialists of RUSTARK Center for research, development, and product promotion have assessed the impact of caramel acidic demineralized syrup compared to common caramel acidic syrup on the properties of confectionery products in the process of jelly production. The results of the study showed that applying acidic caramel demineralized syrups helps to improve the structure, form and taste of jelly

According to the research findings conducted at RUSTARK Lab, the application of demineralized syrups improves the quality of confectionery products, provides a pure sweet taste, reduces the consumption of flavorings and expands the range of confectionery products.
